That looks great. I've been a little hampered. The MIL will do some (read very little) fresh spinach, but doesn't like it cooked at all. I love it in all sorts of dishes like quiche, stuffed chicken and roasts, etc.

Greatest thing ever invented! Any time a recipe calls for baking longer than 50 minutes, I like to protect my crusts with this silicone guard. Fully adjustable, and has a little tab to keep it locked in place. Good up to 500 degrees.
