Girls were up for beef noodle soup tonight, and told me to go for it, if I wanted seafood. They would eat my breadsticks, with olive oil, parmesan, and bread crumbs tho. You bet your sweet bippy!! Didn't have quite enough scallops left, so halved a few shrimp to add to it. Mushrooms, onion, white wine, cream, fresh shredded Gruyere cheese, and too much butter!! A little pasta and asparagus to cover with the sauce.

Not much of a recipe, really. Simple is, as simple does for me. I sautéed up some diced sweet onions and chopped mushrooms until tender (5 min). Removed from pan. Thawed and rinsed a few scallops and shrimp, cut the shrimp in half so they were the same size as the scallops. Cooked scallops in butter until almost done, added the already cooked shrimp, and removed from pan when finished. Added a little white wine to the remaining butter and stock, and reduced down a bit. Added a cup of half/half and salt/pepper. Mixed in a cup of grated Gruyere cheese until smooth, added all the ingredients back in and stirred. Moved to ramekin, topped with a mix of bread crumb, Panko, parmesan and toasted 5 minutes. Done!!
