Tortillas Al Pastor, Green Chile Rice, Poppers

Since I missed Taco Tuesday, it was only fitting to have Tortilla Thursday. Actually saw a ripe pineapple in the grocery produce section yesterday, so figured Al Pastor was needed. The girls weren't keen on Mexican, but I had them hooked at fresh pineapple!! Fried up some fresh torts, to use as finger shovels. Whipped up some green rice, and some poppers that were still in the fridge, to top it off.

The neat thing about fried tortillas is they puff just like soapillas. They won't save, so you just bite the ends off, and fill them with HEB mesquite honey for dessert!!
