Venison chili time in Texas, I like to roll simple with... no beans and just enough heat to make you sweat[Linked Image]

Looks good up
My wife cooked up a biggo pot yesterday. She always says, "when it gets chilly, cook chili"

Hell yea. That’s chili right there. I top mine with sour cream and cheddar cheese with a nice big slab of cornbread.

Got to have crackers and a little shake or two of hot sauce.
The Crackers I've bought lately seem to be crumbly and break before
I can get them out of the bag. Fine looking bowl of red

Over the years I just cook to taste, and make a large batch. I dont make it hot so the wife will eat it....I add heat to mine at the table
recipe is in my head but here goes

5lbs coarse ground venison
3 12oz bottles of shiner bock or any bock style beer. Let it sit out to become flat
1/2 white onion diced
Ancho chili powder
Chipotle chile powder
Fresh ground cumin
Smoked sea salt
Masa harina

In a dutch oven pour a little olive oil in and heat up then add diced onion and cook to your liking
Brown meat in skillet and add some of the seasonings to it while cooking
Put all browned meat into the dutch oven. Then add beer. Stir and add more seasonings to liking
Simmer for 1 hour and taste. Add or dont add seasoning
Simmer another hour
In a warm glass of water mix 4 spoons of Masa Harina and dissolve. Add this to the pot. This will thicken it up
Simmer another 30 minutes and serve.
