Black Eyed Peas - My Way!!

The New Year has officially started, now that black-eyed peas have been soaked, and are on the stove! Smelling up the house, steaming the windows, and planning snacks for the rest of game day.

BEP's, plenty of bacon, onion, garlic, peppers, brown sugar, ROTEL, chicken broth, spices. See what happens in a few hours. Fingers crossed.

Simmered on low for 4+ hours, perfection! Just enough chew to not be mushy and the bacon was great, hint of brown sugar and onion/garlic, and enough spice to still tickle your tongue and throat a few minutes later. The wife won't eat them, and after she tried it she had a full helping. My MIL is 89 years old, and has never had them before; she had seconds so I guess that's a win. With the leftover pork and a salad, it was great.

Those black eyed peas look legit. I would eat a big bowl of those.
