Breakfast sausage

We’ll see how well this cooks up (used pork belly instead of fatback). I did equal parts parts venison & hog shoulder and used fresh herbs.

It looks great just as it is. I wouldn't mind adding a little more pork.

Why even put red pepper flakes in it if there's only 1/4 teaspoon? or the brown sugar?

I think I would add a little extra.
