Cowboy Beans, Tacos, and Elotes

Father in Law’s birthday tonight so we had the family over for birthday dinner tonight.

I used to make the beans with ground beef but my sons is a 5/5 allergic to beef, I know crazy right, so I made it with country style boneless pork ribs cubed up. Sooooo much better than before.

Marinated the chicken over night in olive oil, lime juice, salt, pepper, cumin, chili powder, onion powder, and garlic powder. Made some home made corn tortillas. Onions, cilantro, and queso fresco.

Elotes is sweet corn, mayo, sriracha, cumin, smoked paprika, onion powder, garlic powder, salt, and pepper.

Also made a jalapeño cilantro creama for the tacos and corn.

Lol I think that is all.












My son said naw, I’ll have all the cake lol.

That all looks delicious, especially the cake, little man looks like he’s enjoying the heck out it!
