I love cooking almost anything (sorry, no Brussels, gag!!), but really enjoy trying to get my Mexican food skills sharpened up. Should have paid a lot more attention when we lived in Texas and had awesome local neighbors! I still try my best tho. smile

How can you go wrong with Hatch chiles?? Some shredded chicken for the wife, and some chopped/whole shrimp for me!! And beans, gotta have my beans!!!

Mixed cream cheese, some sharp cheddar, a little mozzarella, grinder salt and pepper, a little garlic powder, and a few drops of Worchestershire. The chicken was shredded and diced up, and I diced some shrimp and left others whole in mine. Sliced the side of the roasted chiles and cleaned out seeds and membrane. Stuffed them full as I could get them. Cooked 375 for about 25 minutes. Weren't pretty, but boy, they sure were good!

I thought they were just right. A little heat, and tingle remaining on your tongue before the next bite. The wife doesn’t like much heat, and she ate them just fine. Even had full helping of seconds. I did remove seeds and rinse, to tone them down a little for her.

She did laugh, and say it made her feel good about having a hot fudge sundae!!
