I mixed some finely chopped smoked pork butt with cream cheese, cheddar cheese and spiced it with pork rub and a bit of fajita seasoning. The smoked pork is a winner in jalapeño poppers. I had to add another block of cream cheese after the first pic to fill them up.

Looks fantastic! Hard to beat good poppers, any way you fix them. Gotten to the point I only split them now if I am laying a shrimp on it, before wrapping with bacon. We got a popper rack, and a jalapeño core tool, and sped the process up immensely. Put all the cleaned poppers in the rack, add all the goo into a ziplock bag with a small corner cut off, squirt them full of cheese mixture. Just top with a half piece of bacon over the crest. No real mess to clean up either.
