Meatloaf

Don't remember ever seeing a thread on meatloaf. Probably because they are all the same. I add a little something extra to give mine a little kick. I use the regular recipe then add salsa and Jimmy Dean Crumbles. Ever add a little lagniappe to give your meatloaf a little panache?

Been too long since i have made a meat loaf... Man i remember my mom's meat loaf growing up was one of my favorites... will have to ask her to make one!

Looking good boss. Meat loaf with mashed taters and brown gravy, and cold meat loaf sandwiches are two of my favorites!!!

Loves me some meatloaf up Emeril has a great recipe:

INGREDIENTS
2 tablespoons vegetable oil
1 cup chopped yellow onion
1/2 cup chopped celery
1/2 cup chopped green bell pepper
1 tablespoon minced garlic
1 1/2 teaspoons salt
1/2 teaspoon dried basil
1/2 teaspoon dried thyme
1/2 teaspoon ground black pepper
1 1/2 pounds ground beef
1/2 pound ground pork
1/2 pound ground veal
2 eggs
1/2 cup heavy cream
1/4 cup ketchup
2 teaspoons Baby Bam
1 1/2 teaspoons Dijon mustard
1 teaspoon Worcestershire sauce
2/3 cup fine dried bread crumbs
GLAZE:
1/2 cup ketchup
2 tablespoons light brown sugar
1 teaspoon Worcestershire sauce
1/4 teaspoon Emeril�s Hot Sauce or other red hot sauce (optional)

DIRECTIONS
Position rack in center of oven and preheat the oven to 350?F.
Heat the vegetable oil in a skillet over medium heat.
Add the onion, celery, bell pepper, garlic, salt, thyme, and black pepper. Cook, stirring, until the onions are soft and lightly golden, about 6 minutes.
Remove from the heat and set aside to cool.
In a large mixing bowl, combine the ground beef, pork, and veal with a wooden spoon or with clean hands. Be sure to wash up afterward.
In a medium mixing bowl, combine the eggs, heavy cream, ketchup, Baby Bam, Dijon mustard, and Worcestershire sauce, and whisk to combine.
Add the egg mixture to the meat mixture along with the cooled vegetables and bread crumbs. Mix with your hands or a wooden spoon until thoroughly combined.
Transfer the mixture to a 9 by 5 by 3-inch loaf pan. Using your fingers or the back of the wooden spoon, smooth the top into a rounded loaf shape.
To make the glaze, combine the ketchup, brown sugar, Worcestershire, and hot sauce, if desired, in a small bowl. Stir to blend. Spread the mixture evenly over the top of the meatloaf.
Bake the meatloaf for 1 hour and 15 minutes.
Using oven mitts or pot holders, carefully tilt the pan away from you and drain off the excess grease from the pan, An adult should help you here. Be careful, hot grease can really burn. Slice to serve.

Its now resting while I have my evening tea. I plan to eat it with Macaroni and cheese as well as a fresh fruit cup.

looks good. My wife makes a great meatloaf, uses crushed saltine crackers instead of bread crumbs.

I usually use Ritz crackers in mine. Been cooking it on the pellet grill for a few hours on lower heat. I like meatloaf.

A neighbor uses oatmeal.

I've never ate a bad meatloaf. Wife chops onions adds a can of Rotel, Whataburger Spicy Ketchup and 2 eggs

Take your favorite recipe and smoke it to an internal temp of 160*. Puts oven baked to shame IMHO.

Put a meatloaf on the smoker for about an hour, then finish it in the oven.

Your meat loaf looks good Mr. Bill , maybe needed more catsup .
The best thing about a good meatloaf is the sandwiches the next few days .

This one should last me a couple of weeks with my small portions. I plan to make three dinners a week as well as a couple of sandwiches from it.

Jimmy Deans sausage crumbles also has bacon bits.

I also do something similar at add lagniappe to store bought spaghetti sauce. I always add mushrooms and garlic sautéed in olive oil then deglaze it with vermouth. I sometimes add fresh vegetables and end up with what I call Marinara Primavera

My lagniappe is finely chopped garlic, shredded cheddar, and chopped bell pepper.
