full of home smoked bacon, homegrown onions, jalapenos and topped with cillantro when its about done up

Good question. I cooked field trial lunches for several years. I used two pounds of dried beans.

I often chopped up a few links and put them in there to make a full meal. There are some great recipes on OT of all the places.

Fortunately beans keep really well. Had lots of leftovers from one of my kids birthdays. Three years later they were as good as fresh. All I did was freeze them in quart ziplock freezer bags and get all the air out.

Nice. Mom cooked a for a lot of family weddings - standard Texas brisket, beans, and potato salad dinner. Her notes say 8# of pintos feeds 100 as a side dish, I've found that to be pretty accurate.

probably a pretty good measure ... we always planned for heavy eaters and used a pound per 10 people, or 10 pounds for 100 people as a side dish for either BBQ or fried catfish
