Sweet Italian Meatballs

Have been craving a good homemade meatball and mozzarella sub lately. The store had a great buy on bulk ground beef today, so the wife and I made up a big batch. Seasoned bread crumbs, Panko, some crushed Saltine crackers, Italian seasoning and a few eggs for binder. Do them up on the rack and the fat all drains off, and they get crunchy all around. We like to freeze them in zip-locks and then we can use as many as we want each meal. Some of these will be getting a marinara bath shortly!!! [Linked Image]

They look great, i love meatballs.

My little boy wont eat spaghetti if i dont make meatballs now. Ive gotten it down pretty well, make it about once a week or every other week.

Me too. Especially because its difficult to cook for one.

Love to cut them in half and reheat in maranara. Just had some amazing meatball subs for lunch, so much mozzarella that it was glued together! smile
