Have been craving a good homemade meatball and mozzarella sub lately. The store had a great buy on bulk ground beef today, so the wife and I made up a big batch. Seasoned bread crumbs, Panko, some crushed Saltine crackers, Italian seasoning and a few eggs for binder. Do them up on the rack and the fat all drains off, and they get crunchy all around. We like to freeze them in zip-locks and then we can use as many as we want each meal. Some of these will be getting a marinara bath shortly!!!
