This was the first tri-tip I have ever had, and I really enjoyed it!
I will be getting more!
This one I cooked sous vide for 6 hours at 131°.
Then I seared it in a hot cast iron skillet for just a little over a minute per side.
It was delicious and as tender and flavorful as could be.

Tri tip is such a fantastic cut of meat and you did it justice on your first time cooking it. Looks great

I've only had tri-tip a couple of times, and those were while I was working in California. They had an awesome beefy flavor. I have never seen any here in Texas for sale in the meat departments I have gone to. Where'd you find it?

A California cut. You have to ask a butcher in Texas for it. It’s the bottom portion of a sirloin right above the flank.
In Texas they usually will just leave it on the sirloin.
It’s ok but I don’t seek it out over a filet or ribeye.

Being from and living in California, we have access to tri tip often and it is generally good. That said, I enjoy appropriately cooked brisket more

Couldn’t agree more!
I’ve got family in CA that cooks Tritip in a crock pot for 8 hrs, pours on sweet baby rays and they call it Bbq.
Not for me.

United has them and bet Costco has them, I bought one from United with seasoning added and vacum sealed.

I went to BJ's Brewhouse yesterday for lunch and they actually had several Tri-Tip dishes on the menu. I had the Tri-Tip Wedge and it was really good. A little overcooked, but good.

Costco occasionally has Prime Tri-Tip. Those are awesome and still cheap.

HEB has them but I think they label them as Triangle Roast.
