Hominy is one of those foods that most people don't keep in the pantry, but I actually like it. I use it in Posole and my wife bought 2 cans to replace what I use several months back. Well, she bought 2 really big cans to replace 2 small cans and I had been trying to figure out what I was going to cook with them. Here is what I cooked last night and it was really good.

1 Large can Yellow Hominy
1/2 Large onion chopped
2 Jalapeno`s (deseeded) chopped
5 Slices of cooked bacon chopped
1 Packet of Sazon Goya Con Culantro Y Achiote seasoning
Black pepper and garlic powder to taste.

Sautee onions and jalapeno`s first and add all of the other ingredients and simmer for 15-20 minutes.

Not a big fan but would try your recipe. JalapeƱos in there should kick it up a notch.

Sounds great.
I love hominy.
After I fry pork chops or venison,I like to leave just a little grease and all the little crunchies in the pan.
Add a big can of drained hominy, some roasted green chili, and salt and pepper.
Cook it up, good stuff.

Also we like drained hominy with a can of hot rotel and velveta cheese.

We make a mix like Texas caviar, using pinto beans, black beans and white and yellow hominy, chopped onions, chopped jalapeno Then add a dressing like oil and vinegar.
