Easter Sunday Eats

Easter Sunday Eats - 04/12/20 07:30 PM

Found a 10 pound spiral cut ham at Albertsons for $.99 a pound so figured I’d grab it even though it’s just my wife and I and 2YO Colt. Made some peel on mashed potatoes and my spicy deviled eggs. Everything turned out great even though I just heated the ham up and glazed it, I’m taking credit lol.

Everything you folks have posted looks great. I'd go face down in any and all of it! Sure would love some recipes from you so I can try to duplicate it here in the MasonPlex!

The ham was strait forward, just heated it in the oven for 3h on 325, then put the glaze on and cranked the heat up to 400 for 20 mins.

The eggs are my own recipe, so I don't really measure anything so I'll just add guestimations.

12 Eggs hard boiled and cut in half
1/2 cup Mayo
2 tsp Sriracha Sauce
Salt to taste
Pepper to taste
Bacon
Small Pickles
Smoked Paprika

Mix the egg yolks, mayo, sriracha, salt, and pepper in a bowl. Sriracha to taste, I like mine pretty hot. I use a quart bag and put all my filling into it, then cut one corner off. Use it like a cake piping bag and fill all the egg whites. Cook the bacon and cut into small squares. Cut the pickles into small slices. Top with a slice of pickle, bacon, and dust with the smoked paprika.

Mashed potatoes are pretty easy as well.

Large Russet Potatoes
Salt to taste
Pepper to taste
1 Stick Butter
1 Cup Half/Half

In a large pot put 3 large russet potatoes in cold water and fill to about 1 inch over the potatoes. Put on high heat and cover. Once the water begins to boil uncover and turn down the heat to get just a subtle boil. Boil depending on size of potatoes normally about 30-40 mins. Strain the water from the pan and return the potatoes to the pan and use a potato masher. In a separate sauce pan heat 1 stick of butter to melt it. Also heat 1 cup of half/half to a slight boil. Remove both from heat. Pour in the butter first and stir the potatoes, then add in the half/half to the consistency you want. I didn't use the whole up of half/half. Salt & pepper them to taste and stir all the ingredients together.

Easter Sunday ... I got up and made from scratch buttermilk biscuits... almost as flaky as those out of a can with the multiple folding process during kneading

then I fired up the big pit, tossed some 2" thick pork chops and venison sausage in the vertical smoker and about 4 lbs of WT tenderized cutlets and one package of tenderized axis, marinated, lightly smoked then moved to the hot end to finish to medium rare/medium. Had some of the cutlets with mashed potatoes and deviled eggs for dinner last night.
