Sides for bbq

Kicking around starting up the smoker

Ribs and chicken, I’ll have to run into town to pick them up

Anybody got any sides ideas?

I always do mashed taters, looking for something new

Saw Cast’s idea of the tater patties which looked good

Macaroni salad. Here`s my recipe. You can cut in half and it still make plenty for 2-3 people.

Ingredients
4 cups uncooked elbow macaroni
1 cup mayonnaise
1/4 cup apple cider vinegar
2/3 cup white sugar
2 1/2 tablespoons prepared yellow mustard
1 1/2 teaspoons salt
1/2 teaspoon ground black pepper
1 large onion, chopped
2 stalks celery, chopped
1 green bell pepper, seeded and chopped
1/4 cup grated carrot (optional)
2 tablespoons chopped pimento peppers (optional)
Directions
1.Bring a large pot of lightly salted water to a boil. Add the macaroni, and cook until tender, about 8 minutes. Rinse under cold water and drain.
2.In a large bowl, mix together the mayonnaise, vinegar, sugar, mustard, salt and pepper. Stir in the onion, celery, green pepper, carrot, pimentos and macaroni. Refrigerate for at least 4 hours before serving, but preferably overnight

I always like a nice change up, macaroni salad is also great like mentioned above.

I had some Texas caviar last night with some pulled pork and cole slaw. Good.

I like a cold , marinated, three bean salad to mix things up and have something different.

Bill's baked beans look awfully good. I like homemade potato salad as well. Potatoes, garlic powder, celery, green onion, carrots, sweet hot pickles, mayo or Miracle Whip. A few pimentos and boiled egg sometimes.

Fires on!

Ribs, pork tender loin and jalapeño sausage

For sides I went with...

Cast tater patties
Wife’s grandmas pea salad (has red onions and sweet relish in it) so it’s a little different
And I soaked some thin sliced cucumbers in red vinegar with red onions and dash of sugar

1 hour until it’s all done

Bout to start on prepping tater patties

German potato salad and a pinto beans.

3 pounds of beans washed and rinsed, soak over night, start early, in the pot add 1/2 pound of fried bacon ends, one package of Williams chili seasoning mix, salt to taste.

German Potato Salad.

Ingredients
2 1/4 pounds potatoes (waxy variety, such as Yukon Gold
4 slices bacon
2 1/2 cups chicken broth
1/4 cup white wine vinegar
1 cup onions, diced
1 teaspoon salt, or to taste
1 teaspoon sugar, or to taste
1/4 teaspoon ground white pepper
1/4 cup vegetable oil
2 tablespoons mild brown mustard
Preparation
Cook the potatoes in simmering salted water until just tender, about 15-18 minutes. Drain and dry. While the potatoes are still hot, remove the skins and slice the potatoes 1/2-inch thick.
While the potatoes are cooking, prepare the dressing. Cook the bacon over medium-high heat until the fat has rendered and the bacon is crisp. Remove the bacon to a plate with a slotted spoon, reserving the bacon fat in the pan; crumble the bacon into small pieces, and reserve.
Bring the chicken broth, vinegar, onions, salt, sugar, and pepper to a boil.
Combine the oil, rendered bacon fat, and mustard with the warm potatoes. Pour the boiling broth-vinegar mixture over the potatoes. Toss in the crumbled bacon. Serve warm

I put chopped onions in a big pot of ranch style beans and have it under my ribs in the smoker. The beans get all the drippings and the smoke too.

My wife’s grandmother was a true German immigrant

Her English sucked, married a soldier (grandpa) after the WWII and came here deal

The pea salad and cucumbers came from her grandma’s recipe

She rarely makes them, maybe 3 times a year. Still the best

Find a sweet and sour sauce recipe and use it over the cooked cubed potatoes.

Red, Hot and Blue Potato Salad
2 lbs. Red Potatoes
2-4 hard-boiled eggs
1/4 cup fine chopped green onion tops
3/4+ cup mayonnaise
3/4 teaspoon celery seed
3/4 teaspoon salt

1. Steam the potatoes skin-on for approximately 45 minutes (you can boil them, but they tend to be slightly mushier in the end result). Set aside until cool enough to handle. Boil your eggs, and then do the same. When cool enough, peel the eggs ONLY (do NOT peel the potatoes -- the skin gives it part of its unique texture and taste).
2. In a large bowl, mix the remaining ingredients together until thoroughly mixed. Chop the potatoes and eggs into bite-size pieces and add to bowl. Mix GENTLY -- you want salad, not mush -- until blended.
3. Serve at room temp for up to 2 hours after making -- refrigerate leftovers. It tastes best when warm or room temp, but is delicious cold too -- so if you are making this in advance, it's fine to chill it.

Marinated French sliced green beans (chilled)
Fresh green beans with new potatoes
Baked beans (doctored up Bush’s)
Ranch style beans
Three bean salad (chilled)
Texas caviar (I know, peas not beans)
Refried beans

TATERS

Twice baked taters
Baked taters
Candied yams
Steak fries
Tater salad (any kind but German leads the pack)
Red tater chunks tossed in butter and parsley
Fried sweet tater rounds
Au grautin taters

SALADS

Fresh sliced cukes
Fresh sliced maters
Fresh sliced sweet yellow onions
Fresh deveined jalapeño spears
Dill pickle spears
Wilted lettuce or spinach salad
Fresh fruit salad

DESSERTS

Peach/Apple/Cherry/Blackberry cobbler
Banana pudding
Homemade ice cream
Fresh baked peanut butter cookies
Lemon meringue pie
Strawberries
Spiced apple slices (sugar, cinnamon & butter in cast iron)
Moon pies (why not?)


Some good BBQ sides off the top of my head...

This is close to my wife’s recipe. She uses chopped celery instead of onion tops, but I’m sure it’s just as good.
