Heck I like them all.

I usually end up with st louis as well. They don't stock spares very well or often at my heb's and I prefer them over baby backs.

I usually buy spare ribs and cut em down to St. Louis style.
I cook the extra pieces for snacking.

Middle; although it is very hard to find good, “small”, ribs. Pigs, like beef are being taken to market much larger. Larger means more waste and tougher.

I really like their dino ribs. They are beef, not pork.

Cooked the dino ribs the first time this year, they were great, but I think I like pork ribs better.

Usually get BB don't really know why. Heard St. Louis are juicer.

I was the same way about baby backs until I tried both side by side. Preferred the Saint Louis ribs. TGIF brought us baby backs years ago. Most of the barbecue joints including 407 stuck with the Saint Louis ribs.

These are ribs from 407.

Baby backs are my preferred. More juicy and meaty. But I will cook and eat them all! I do need to find some good beef ribs somewhere.

Baby Backs were not availed when I was growing up. That part of the rib went into the bone in pork chops.

Middle, I'll be smoking 2 racks on Sunday for the Superbowl.

Baby Backs on the right for me....less trimming and work, more beer drinking and eating.

I may be wrong but I think St Louis is just trimmed Spares. I personally like the thin part of boneless meat on the Spares so I buy Spares. Never cared for Baby Back ribs.

Sometimes they throw a piece of gristle from the sternum in there. Don't care for that.

We prefer the country style ribs, although some consider them not being ribs they work for us.

I prefer country style ribs from a pork butt. Although it is technically not a rib, it taste great , has way more meat, and pork butts are on sale almost every other week for .99 cents per lb. somewhere. You can make your own if you have a sharp knife.
