Prime rib turned out awesome. About a 7.5 lb and took 4 hours at 275.

Looks great. I’ll throw mine in here too. I had planned to smoke it but with bringing home little man and everything else I had going on, I put it in the oven. Did the oven off method and took it out at 130. 10.8 pound. 500 deg. for 50 minutes then off til 130. It was amazing.

Don't worry, we had plenty to go around. About equal parts applewood smoked horseradish + honey mustard. Paired perfectly with the meat
