Lot's of "when I was younger" reply's..... I never tried or even thought of putting chili with eggs until an old hunting buddy of mine told me about it when I was in my early 40's. Now....whenever I make chili....I make a double batch just so there is plenty leftover for breakfast with eggs, cheese and onions.
So I did a little different version this morning. 2 white corn tortillas stuffed with Asadero and crisped on the iron skillet. Next was a layer of chili, then topped with 2 eggs and finally some more chili on top.
