Chili and eggs..would you?

Still one of my favorites. Homemade Axis chili over pork tamales, topped with two farm fresh over easy eggs.

I do Chili and eggs all the time! I usually do scrambled eggs, topped with chili, cheese, and onion. But I'd eat your version too!

I have eaten a lot worse things than chili and eggs, I’d definitely get down with that

I have never tried that combination but when it comes to food I will try almost anything once.

Give it a shot! The egg yolk combines nicely with the rich flavors of the chili and pork tamales. Almost like a gravy.

When I was younger I used to eat left over chili on top of fried or scramble eggs for breakfast.

Yes I would even if it had beans in it. I'd just eat it with a tortilla.

Growing up we had leftover chili over omelettes. Pretty good stuff

Chili cheese eggs is a staple in my house. Scrambled eggs topped with chili, chese, diced onions and sometimes sour cream.

Lot's of "when I was younger" reply's..... I never tried or even thought of putting chili with eggs until an old hunting buddy of mine told me about it when I was in my early 40's.
Now....whenever I make chili....I make a double batch just so there is plenty leftover for breakfast with eggs, cheese and onions.

Oh heck yeah. If it's my chili it's got enough fat in it that I can heat it in a frying pan and fry the eggs right on top of the chili. Good stuff.

So I did a little different version this morning. 2 white corn tortillas stuffed with Asadero and crisped on the iron skillet. Next was a layer of chili, then topped with 2 eggs and finally some more chili on top.

Pass a plate of that please.
