Where I am currently located for work there is no such thing as smoked sausage, breakfast sausage etc...so I’m making my own. All of my meat processing equip is at home, so I picked up some smaller batch equipment that will get me by here in the land of rice and noodles.

Little manual #10 grinder and 7 lb stuffer. This little grinder ain’t my 1 hp at home, but it works..

That's a great idea for a side business....bet the guys at work would buy you out in the first 10 minutes every day....

On a side note, I’ve always wondered how cleaning grinders and stuffers. Does it all come apart and easy to clean?

Yes. You'll need a good bottle brush.

We ran a couple of pieces of bread through the grinder and then took it apart to clean it in the sink.

Thats my grandmother cleaned hers. It clamped on a bread board that slid out of the kitchen counter cabinet just under the counter top with a metal rim.

I’m a fan of AC Legg’s Old Plantation Seasoning and just add a little to it depending on what I’m making....for the pork & green onion sausage I used the Old Plantation #10 pork sausage blend scaled for 5lbs of meat. Added 2 tbs of minced garlic, 1/2 tsp cumin, 1 tsp hot smoked Spanish Paprika, & one bunch of Spring Onions from Thailand (closest thing to green onions I could find and they are very good).

I like Legg's as well. Good blend that keeps me from thinking too hard about the mix.

What brand/make is your hand grinder? I bought one a few years ago to use at home for smaller batches, think it was a Weston? but not sure.... that thing sucks! I made 50 pounds with it the first time and it is leaves a lot to be desired. Plat wouldn't stay tight and the plastic/nylon bushing around the auger about wore out the first use. Very rough casting also.

It’s an LEM #10. I’ve only ground 10lbs so far with no issues, a lot of cranking though lol.

At it again this weekend. The boss made me take this Sat off, so now I have a two day weekend to make sausage and drink cold beer. Just whipped up some homemade breakfast sausage/egg/cheese breakfast sandwiches. About to get busy on a test run of pork/chipotle/garlic fresh sausage, more pics to come. Hope all of you are well.
