This one is charred corn in a skillet, Mayo, salt, and pepper. Stir that up and then I grate cotjita cheese in and stir that in after the mayo has cooled down the corn a bit so it doesn’t melt the cheese. Then top with cilantro and paprika. I also topped with a jalapeño crema I make, but just happened to have that, the corn is great by itself even without the sauce.

Yep exactly.

Cooked this for my wife for Valentine’s Day. Had we went out it probably would have been 60-80 bucks. Think it cost me 30-35 bucks.

I love cooking steak for me and my mom. I love mine still kicking and she wants hers crunchy. For me trying to cook a steak to please my wife and her family is damn near impossible they all want some different variant of medium.

If you’re talking about the top ones yea was trying a reverse sear with my pellet grill which I’ve never done before and it might have gotten a tad over done but I like my steaks medium to medium well.
