I love cracklins. We used to feed them to our bird dogs when I was a kid. We'd by a 50 lb box and put some in with their dry food. I'd eat my share of them too. grin

Have cut up and rendered the lard from lots of them and the by product is cracklins. It is not just port belly but all hard pork fat can be used. That home lard and my Grandmother using it for biscuits could be why my arteries clogged, but dang that was some fantastic eating.
