Potato salad

I have leftover ribs for a couple of upcoming dinners. A little burned out on coleslaw and beans. Plan to make a small batch of potato salad. I'm thinking of three boiled potatoes, two boiled eggs, purple onion, mayo, and mustard.
What would you add?

Try a German potato salad recipe. Or what we call a simply version, dice up 2 or 3 potatoes, boil until just about done. Chop up 3 slices of bacon and fry to almost crispy, add the boiled potatoes, and fry to crispy. Season with salt, pepper, and celery seed, a little vinegar, stir rea; good and refrigerate.

Seems like a lot of egg for the potato count.
I like mine with mustard, mayo, dill relish, onion, egg, salt, pepper, and garlic powder.

Potatoes, chopped onions, chopped sweet pickles, cubed sharp cheddar cheese, mayo and mustard and paprika sprinkled over the top when finished. Not a fan of eggs in my potato salad. I have used HEB potato salads and they are good when I`m lazy.

Brookshires deviled egg potato salad is pretty good stuff.
Rudy's BBQ makes a pretty good potato salad.

HEB has a deviled egg potato salad in the deli area. It’s pretty good, I bought it a few times over the last couple months. I take it with me when I travel.

I start with chopped sweet yellow onions, celery, and chopped sweet pickles in a bowl. You can add some chopped carrots too for a tasty crunch. A little sweet pickle juice over the mix to marinate with salt and pepper. Let that sit while you boil red potatoes and eggs. Peel the potatoes and chop to size in a large mixing bowl. You want the potatoes to be very warm. Add salt and pepper. Chop the eggs into a separate bowl and set aside.
Now back to the marinate bowl. Do not drain the bowl. Add Miracle Whip or mayo. MW goes better with sweet pickles but either will be good. Stir the bowl and add a little more MW or mayo until you have a nice creamy mix. Pour half of the mix over the warm potato chunks and gently fold it in. Add the rest and repeat. Taste it and correct seasoning. Once it is perfect, gently lay the coarse chopped eggs on top and very gently fold them in.
It is best when fresh and warm, but man, it is good from the fridge tomorrow too!

Done deal. I boiled the potatoes whole and peeled them with the back of a fork then smashed them with my hand. I used a lot of your suggestions.

When you boil the potatoes, add in some seasoning just like you're boiling crawfish. It's a game changer.

Boil a potato, peel, cut in chucks, add a few tablespoons of your favorite dip or salsa.

Not potato salad but once those taters are smashed by hand drizzle them with a mixture of butter, garlic, salt, pepper and Parmesan cheese. Bake them in a 450 degree oven until golden brown. Pretty tasty.

Mine came out fine. I used my neighbors purple onions. They were almost like eating apples.
