Bought these at a Mexican market in Little Elm. They are called Tabletas, which means small ribs. Frreeekking great. I bought 2 pounds, got plenty for dinner tomorrow.
Yes, but if you look at them the slab they are cut from is a couple inches thick. I want some beef ribs with meat on them, all the beef ribs I ever find are pretty much just the meat between the bones.
Those are great for nibbling on while waiting for whatever larger piece of meat you’re smoking to get done. I’ve always heard them to be called Mexican ribs, glad I actually know the name.
