I think I figured the oryx out. Just have to cook it really hot and fast.

Grill grates. Yea they are expensive but they are proven and last. You can also flip them over and do burgers like you are cooking on a flat top. Worth every penny.

I think they can do either. I have mine set on top of the old ones because I use them on different grills and sometimes don’t use them if I’m cooking smaller things like grilled asparagus that would fall in the grates.

Like beef. It is no prime filet but I can cook oryx better than a lot of people can cook a steak.

Yep, its good meat, and that looks good.

I have cooked a lot of Scimitar and Gemsbok Oryx, I give a slight edge to the Scimitar on flavor and tenderness.
