BBQ Pizza

I smoked a brisket today, found some pizza dough in the frozen section of heb, made a white sauce, added some peppered Canadian bacon from Pruski’s in Sayers, onions, and mixed Monterrey jack cheese and mozzarella. I should have cooked it a little longer to get a crispier dough, but this was my first run with it.

Pretty good, now if I get the crust a little crispier it will be better.

I made another pizza on Sunday, similar to the one above, this one had: the same white sauce, brisket, onions, sautéed mushrooms, Gouda cheese and dollops of a peppered goat cheese. I made it in the oven and I was much happier with the final product.

I would tear into that til it was gone or I couldn't walk..... cheers

On my grill the bottom of the pizza can burn while the top is underdone.
I bought a "melting dome" and like the results better. It's nice to not heat up the house.

To help crisp the crust maybe cooking the pizza on a pizza stone or in a preheated cast iron skillet would help. Another idea may be to pre-bake the crust a few minutes (3-5) before adding the toppings.

When doing it in the oven I got the crust to where I wanted it, then just hit broil to get some of the cheese browned.
