Yes, depending on the use. 'The 90/10 would be great for some dishes, but the question was about burgers. I'd go all venison for chili or spaghetti sauce,

That’s about a 73% / 27% mix. Which is about what you get with ground beef. But the salt pork I think would add a different flavor to the mix. Have not used salt pork but did make some deer burger using pork trimmings when I realized I was out of beef trimmings. Already had the deer meat thawed and could not find a quick source for beef trim. Turned out good.

I catch brisket on sale and use them to mix with my venison. I use about 15 lb brisket to 25-30 lb of venison. If your looking for bacon flavor, I would use bacon ends and pieces
