Way to much fun. This thing is amazing. I started the fire in it and let it run for a little while. Cut the grates closed almost all the way and it settled in at 275 and didn’t change but two degrees for five hours almost.

Those ribs look like baby backs with at least a half of the loin still on.

Bill they were a package of baby backs from sams club. Chose the ones that looked like they had the most meat on them, put some rub on them and tossed them in the grill. I am just figuring out all this smoking stuff.

what did you rub them with? the bark looks really black, almost like soot from either green wood or lump/charcoal that hadn't ashed. I am guessing your Traeger is a pellet smoker??? wondering if that's from the pellets??? I am not familiar with those on how the bark turns out.

I cooked them in a Kamado Joe I used the Kamado Joe lump charcoal and about four small chuncks of hickory. For the seasoning I used treager blackend saschatwean it is garlic and black pepper with some other stuff. The bark turned out amazing. It wasn’t too hard but had great flavor.
