Sweet and Spicy Chicken

Last night I helped out in the kitchen. I decided to try a new recipe. It was delicious , very simple, and is definitely a dish to eat again.

Sweet and Spicy Chicken

Make a marinade using the following ingredients:
4 Tablespoons brown sugar
1 Tablespoon Garlic Powder
1 Tablespoon Ground Cumin
1.5 Tablespoons of Chili Powder
1 Tablespoon Paprika
1/2 teaspoon salt
4-5 drops of Liquid Smoke
1/4 cup Olive Oil
Optional additions include cayenne pepper and adobo sauce to taste.

Mix all of the marinade ingredients in a zip top plastic bag.

2 pounds of skinless chicken legs. Make two or three cuts into the meaty portion of the leg.

Add the chicken to the marinade and marinate 1-2 hours or over night in the refrigerator. About 30 minutes before baking remove the chicken from the refrigerator.

Place the chicken in an oven proof container and bake in a preheated oven 20-25 minutes. Turn the chicken over in the pan and bake 20-25 more minutes until done.

I line the cooking pan with parchment paper to assist with cleanup before I add the chicken.

I served seasoned green beans and a multigrain dish with the chicken.
