Wife and I have done it several times, we love it. Really like the texture and flavor of Hominy.

That's our go to New Year's good luck meal. Wife's family is from NM and that's popular there instead of black eyed peas. Now I'm craving some!

Haven’t had the verde but love the rojo and the next time we go on vacation we’re going to ask for the blanco.

Run down of my "tweaked recipe"

8 poblanos
2 jalapenos
one medium onion
5 garlic gloves
cumin
salt
pepper
cilantro
2 cans chicken broth
3 medium size cans of hominy
Pork butt (2 lbs), cut into chunks

Roast all the peppers, onion, garlic and place in blender, after roasting. You decide how spicy you want it by deseeding the peppers or not. Add cumin (to your taste) salt and pepper. Puree and strain so you do not get any pulp. Brown pork in a good size pan. I then placed the pork and the "verde sauce" in a slow cooker along with the hominy. I added 2 cans of chicken broth and let it simmer for about 4 hours.

The sides are up to you. We sliced sourdough bread and sopped it in the bowls. We also squeezed fresh lime and added fresh onion and cilantro on top. The old style calls for adding cabbage and turnips as a garnish. I don't care for either of those but if you like it try it. Also good with Saltine crackers.
