That looks REALLY good BuckRage. 27 lbs of meat isnt a small thing either. I just finished 25 lbs of venison sausage and that was alot of work.

flehan That looks incredible. One of these days I am going to try to make me some home cured bacon. Do you use a brine or dry cure? Recipe?

most all of that will be gone in a few days. made up some home made gift packages for a very select few family and good friends. everything fresh and made from scratch.

Prickly Pear Jam (cactus right out our front door on our neighbors)
Apple Pie Moonshine 1 quart (made this 4 months ago so flavors would mellow)
Applewood Smoked Pepper Bacon
Ground Venison Mesquite Pepper Jerky
Ground Venison Hot Stix Jerky
and my 16 yr old daughter made up some home made puppy treats for our pups and a select few people

My wife and daughter did a fantastic job putting these baskets together. You can't tell but there's 4 packages of bacon and 4 packs of jerky in there. Doggie treats were in a similar but seperate basket.

Costco has the best pork bellies that I've seen.
