Sweet potatoes

My first dish is out of the oven. My wife discover this dish. Dice the sweet potatoes and coat with olive oil. In the oven for 30, stir, add maple syrup and lemon juice. We added a sprinkle of cayenne. Back in the oven for another 30 minutes and Ta da.

Here again the had the same old worn out article in the morning paper about the cost of Thanksgiving dinner. They listed four pounds at $1.00 per pound. HEB had them at 20 cents per pound. I got enough for my Christmas dinner. They will keep all winter. The maple syrup is the most expensive ingredient in this dish.

Had this bottle for several years.

This dish is easy to reheat in the microwave.

H.E,B. and Wal Mart in Taylor had them 8 lbs for a dollar, regularly 98 cents a pound.

I'm not sure I know the difference in sweet potatoes and yams. I was waiting on a mother and her daughter who were taking their time picking out sweet potatoes several years ago. I asked what they were looking for. They explained uniform and easy to peel. I've picked the ones that were shaped like a baking potato since.

I grew up on a cotton farm in Arkansas. We always had a sweet potato patch. My mom would put them in the oven whole. We'd peel the tops off and put butter in there, then eat them like an Ice cream cone.

Yup but not sure I could tell the difference on the table.

I use then a lot, love the taste and include them in stew and bake then mash them often. Also use a baked one for thickening in Stew

Yams and sweet potatoes are basically same but like red or russet potatoes are the same thing. I raise sweet potatoes in my garden. Six plants gave me 47# of potatoes this year. I love them just about every way, but my favorite is PIES.

My favorite is to bake them whole then slice about an inch thick hit with a little butter and some salt, they are perfect just like that.

Mom would slice them into 1/2” silver dollars and fry them in bacon grease (maybe), then make cream gravy to put on them. That’s good!
