Beans with no pork products?

Beans with no pork products? - 08/14/18 05:51 PM

Making beans for a function at my wife’s work for Thursday. One of the ladies doesn’t eat pork so cooking porkless beans, any recommendations on a substitute for bacon etc in a good pot of beans?

Wouldn't take much....just grab a sliced or chopped beef sandwich from your local bbq joint....eat half and toss the other half in the beans....

I've used brisket in beans many times and they're always great. One can of ro-tels adds just enough spice.

No one asked but I would use ham hocks and announce it before serving. She could do without.

Go with some good smoked brisket. The smoky flavor will add great taste to the beans.

Also add about 1 to 2 tablespoons of chili seasoning mix for each pound of beans, not chili powder, but a chili seasoning mix like Williams or Fiesta brand chili seasoning mix.

For future reference, Brinkman smoker. Pot of beans in the water pan over the coals and under the brisket. It'll catch all the drippings, then add the end cuts to the beans. Delicious and Kosher. Everybody's happy. Keep an eye on the water level. I keep a pot of water at a simmer to add when it needs a cup or so to cover.

Make them with pork, but add it last. Before you do, pull out a serving of virgin beans for the nice lady. Everybody wins.

I don't know why she cant have pork, don't know if its religious, allergy, or a personal choice, but she is a nice lady and my wife gets along well with her so not making a stink. I was going to use some beef sausage but the wife says they have had their pot lucks before and the beans just didn't have meat that's how they want em so that's how im gonna make em.

Im sure I would prefer different.

You can buy this package which included the seasonings and make it as is. I was surprised how good they were with no extra seasonings or pork products.

You reminded me of my grandmother(Baptist). She would not eat pork! Said they had worms. Man she is a fiery red head.

Some pork had worms in the old days that would cause trichinosis. Had not thought of that in decades.

Cook in chicken stock, not broth, and Fiesta pinto bean seasoning. Not the same as bacon or hocks but pretty good, I'm not too picky though.

Ive had a bottle of the fiesta bean seasoning I won in a bbq cookoff as part of a basket of spices that Ive never used. Figured I have never seasoned beans without bacon/ham/sausage/etc. so I would give it a try. To be honest they were definitely not bad, a lot better than beans I have had from others and even at bbq joints etc, but I missed the bacon.

8 people ate almost a pound of dry beans so they couldn't have been too bad lol.

The organism is deactivated at 137 degrees so you can safely eat pork products cooked to medium without any issues. The old guideline of cooking to160 was always overkill even if the pork has trichinella. Meaning it is safe to eat pork that is still pink in the middle and the juices don't have to run clear.

The above applies to whole cuts...ground pork like ground beef still needs to be cooked to 160-165.
