Zucchini squash

Zucchini squash is about done in garden with the heat. We love zucchini fries. Can we cut it in fry strips and vacuum seal to freeze? Thanks for all help!

I don't see why you couldn't. We do a lot of peaches that way.

We are getting a lot out of our garden now. How do you do your zucchini fries? Looking for different ways

You'll need to blanch it in boiling water for about a minute or else they will get really mushy when you thaw them out. I've already been down that road. Trust me.

Crispy Oven Zucchini Fries

Ingredients:
=1/2 cup all purpose flour
=1 egg, beaten, with 1 egg white (we just use water)
=1/2 cup Italian Panko
=1/4 cop Parmesan Cheese
=1/2 teaspoon smoked Paprika
= black pepper
=2 Zucchini, sliced into 1/4 to 1/2 inch and 4 inches long
= cooking spray

Preparation:

Preheat oven to 425 degrees
Add flour to a pie plate and whisk in some salt and pepper. Beat the eggs together in another pie plate.( if you want to use eggs) In a third pie plate, whisk together the panko, Parmesan cheese, smoked paprika, and a big pinch of salt and pepper. Dip the zucchini in the flour, then in egg (water), then through the breadcrumb mixture. Place on a sheet tray spritzed with non-stick spray.
Bake 10 min, Flip and continue cooking 10 min, or till golden brown.
