Smoked a wagyu brisket - 05/18/18 04:02 AM

From The Local Yocal in McKinney. Best brisket I've ever had hands down.

Smoked sea salt and cracked black pepper only.

Awesome! Sure looks better than my 1.79 on special brisket I got on right now. Been going since 5:30 last night. Along with chicken, 2 racks of spare ribs and 2 pork tenderloins all for a grandson's graduation party.

I'm sure those will eat great! I hardly ever spoil myself like that but was at a specialty butcher shop in McKinney after speaking at a conference and couldn't help myself.

This Monday the 28th Snake River farms will ship me 2 wagyu briskets for my daughters college graduation BBQ were doing. They were on sale for $125 each and 13-14 pounders. If they are as good as advertised I'll be ordering 3 more for my 50th B-day this July....gonna get drunk and pig out!

I just looked them up, and the actual prices on Wagyu beef. I've always heard it was expensive but eeks333 eeks333 eeks333

I cook a lot of briskets that come out real good using choice or prime, wondering how much better it can be with a $125 wagyu brisket....

Thick kosher salt and cracked black pepper only - smoked at 225-250 over pecan or hickory or oak (I prefer pecan) until 160 degrees, then wrap in peach butcher paper and place back on at 250 until internal temp hits 190-195 for wagyu - 200-205 for prime/choice. Rest for 1-2 hours then enjoy!

Got my briskets today From SRF. They are the same cut that Franklin BBQ in Austin Tx uses. SRF actually sells another cut that cost more than the ones I got but geez, you gotta stop somewhere! And I cannot wait to compare them to Costco prime brisket I usually get.

When you look at it for a special occasion I don't think paying $9.60 is too crazy. Let's say you were going to serve decent steaks for the party opposed to a real nice high end brisket. On sale at HEB the Prime 1 NY Strips/Ribeyes run you $9.99lb on sale. So it all depends how you are looking at it for a special occasions.

Re: Smoked a wagyu brisket - 05/27/18 05:41 PM

Well the briskets tuned out great. Smoked 3...2 wagyu and 1 Costco prime. In all honesty the Costco brisket is almost as good as the waygu. The waygu is not worth the extra $100 bucks.
