Squash recipes - 05/01/18 02:11 PM

It's that time of the year again. I just made twice cooked pork, but I need more squash and zucchini recipes. Also, my neighbor asked about spaghetti squash. Recipes please.

Here is today's haul.



You can forget about the tomatoes. I got a tub of chicken salad yesterday. Next comes BLTs.

I like to slice little ones thin and put a dab of ranch on them and eat.

Old hat, but sauted with onion and mushrooms salt pepper and garlic is hard to beat.

battered in egg wash and seasoned flour is good.

Have also sliced long ways about a 1/4 inch thick seasoned with salt pepper garlic sprinkle with shredded cheese and bake.

Ill be looking back here interested to see some new ideas.

You'll just need to play with the amounts depending on how much you want to make. Cube the squash and boil until soft. Saute some chopped onion in butter. Put squash and onion in a bowl and add sour cream and Italian bread crumbs or Stouffers stuffing mix. Gently blend and put in baking dish. Top with cheese if you want. Heat for 20 minutes or so (depending on amount).

Yep, that is what I do. Add some onions and garlic with them and you are good to go.

Fried is my favorite, just like I do green tomatoes. Eggwash then seasoned cornmeal. To this day every time I cook these I think of my Grandma and her garden.

slice and sprinkle with olive oil and season to your liking then broil for 20~

Slice them thin on a mandalin, add a little avocado oil and stir fry. food

For holiday meals my wife does a casserole: box stove top stuffing, sweet onion, cheese and squash. You sautee the onions and squash, mix it with the stove top stuffing and top with cheese, then heat in the oven until cheese melts.

Make some refrigerator style sliced and pickled squash. Just pick a refrigerator pickle recipe, and substitute squash for the cucumbers.

my wife makes that too and also with egg plant. my favorite way will always be fried then sprinkled with just a touch of sugar as soon as they come outta the grease! food

Made this Sunday with cut up squash and zucchini. Add some fresh garlic and sesame seed oil . Pretty dang good over fried rice

Ill soon be giving them away. Soon after that my neighbors will be locking their doors to keep them away. I can only eat one a day, and they don't go with every dish.

Here's one dish that I can freeze. I call it marinara premivera. This will last me a year.



I have to simply add links like this.



Or, I can add ground beef and mushrooms.

I like the yellow squash stewed with onions. Season with salt, pepper and sugar.

Stir fri is better than stewed to me. I add salsa.

"I made a really good dish the other day that you would like--and it's something to do with your zucchini.

It's called Squash Ribbon Salad. You get a zucchini squash and cut the ends off. Then you use a peeler to shave it into ribbons. You throw in some walnuts, some grape tomatoes or cherry tomatoes cut in half, and some fresh basil. Then you toss it with some olive oil, salt, and sherry vinegar or champagne vinegar. Tasty! Goes great with Italian dishes"

Thanks for this thread bill. Got enough squash for the week from the future in laws. Haven't had fresh in several years.
