Definitely not cooked by a coonass by the looks of it. Looks good though. Next time try browning some onions and garlic 1st, 2nd throw in the shrimp/crawfish and brown them with the onions and garlic, 3rd throw in a little cream of mushroom and smoked paprika, 4th throw in some seafood stock, then turn fire down and cover to let simmer for 30 minutes.

That looks really great. I make a pastalaya now that my family prefers to jambalaya but a great jambalaya is hard to beat.
