But it is Bill's post again...
The Brussels Sprouts, my sister is getting me to cook her Sprouts (I'm the camp cook at Point Blank), and I'm getting to like them. They usually disgust me, but her and an old quail hunter I know are changing that.
I've got no recipe, but it goes something like this -
Cast iron skillet with a dollop of bacon grease on medium heat
Wash the little boogers well and clean them up if you don't want the leafy stuff sticking out, put them in a big bowl
Break out your seasonings -
Plenty of coarse salt and smoked salt
Fresh ground black pepper
Light dusting of garlic powder
Some green herbs of your choice, Sis likes Rosemary and Thyme
Stir them around good until coated with the stuff
Heat up the skillet, turn on the oven -
Dump the seasoned boogers in the lightly smoking bacon grease and toss them around until you get a distinct color change to dark green
Add some minced garlic to the skillet and toss the boogers again
Add a little water and a good dash of Balsamic vinegar
Cover the skillet and reduce heat.
Stir and simmer, stir and simmer
Put the skillet in the oven, uncovered to finish, just for a few minutes, don't burn the drippings up
Pull the skillet from oven and remove Boogers to serving bowl
De-glaze the skillet with your imagination and pour the glaze over the Boogers in the bowl. Now you've got something. Toss and enjoy.
I am experimenting with the glaze. Basics are more balsamic and/or red wine plus a berry preserve to make a tangy sauce. Add some chilies if you wish. I'm experimenting with Habanero flakes and Blackberries. No thickener in this, you want a clear glaze. Sis says they're the best ever.
