Stove top backstrap

I know a lot of you guys cook steak on a grill. I'm more of a cast iron type guy.

Toss in 2 table spoons of oil, turn the heat up so the oil just about starts smoking, three minutes per side, pull off and rest.

While the the strap is resting. use the same skillet and pour in half a cup of red wine; probably would have been good with a pinot noir but I only had a cab. Once the wine cooks down into sticky added in some beef broth, blackberries and black berry preserve. after the blackberries were cooked down and and soft and mushed apply to the new rested steak and enjoy.

(I'm sure some of you guys are against sauce on steak... It's okay to break the golden rule every now and then)

I like sauces on fine cooked meats from time to time, especially with wild game.

those types of sauces is something I have always wanted to learn. I spent several weeks in Sweden a number of years ago and all their dishes has various different types of wonderful sauces over wild game

Thanks guys. It was tasty and really wine sauce is so easy to make and has tons of possibly. Switch out to blackberry's for onions and mushrooms and it's completely different

Huge difference between a wine sauce and A-1 sauce! A-1, heinz 57, or kechup is a sin of the highest proprtions!

That looks good! I like to make a wine mushroom sauce from time to time. YUM.
