gonna take a while for sure ... I hope you have it already thawing out??? Smoking that large of a turkey might keep the internal temperature too low to be safe depending on how hot you are smoking. 225-250* will take 11-14 hours, or about 30-45 minutes per pound.

check to see if the turkey is pre-brined, if not, you will need to brine overnight to keep it moist during the cooking process.

I don't want to mess with brining. I'm thinking about cutting it up and cooking it, sectioning it...

I'm thinking about cutting turkey in 2 pieces, cut breast out bone and all, leave rest of turkey in tack. I don't know. Just an idea.

That is a huge freaking bird, halving it up or quartering it up might be your best bet.

30-45 minutes per pound running 225-250 degrees on your smoker. I have cheated by smoking for 4-5 hours (to get the smoke flavor), then removing to a roasting pan, cover in aluminum foil and putting in the oven at 350 degrees until internal temperature of the thickest part reaches ~170

I have done that with chicken before, did know there was a name for it. But I don't want to smush the breast, or cut out/discard back bone. I think if you cut the breast out, like how they sell turkey breast at the store, the rest of the bird would lay flat, idk. Lol.

23 lber? wow, low and slow heat, not sure if your pressed for time or not, might consider splitting the bird like chickens and would cook quicker.
Not sure how big your smoker is, we do a small one, got a cheap UDS smoker, my 4yr in doing turkeys, no complaints sofar!

15 pounder is brining, then fun starts tomorrow morning at 4am with fire on, some rub, apples, onion parts, small amount of spices and we are good!

Only took 5 hours to cook that turkey. That's the only way to cook a turkey. I'll cook it lower and slower next year.

You can go ahead and take the bones and wings out of the breast and lower your cooking time.

My Spatchcocked 15 pound turkey took 6 hours at 275. It was really juicy and flavorful.

I smoked a spatchcocked & brined a 21 pounder. Threw the wood to it - finished in 3 hours while keeping temp in the 400 - 425 range. It was hands down the best smoked turkey I have ever had. Cooked on combination of red oak and apple wood.

I smoked mine over night . 9pm-9am. Then wrapped it with foil and put in the oven for 4 hour hours at 200*. I fill the pan with chicken broth.pecan wood. 4 years running.
