lotsa good recepies out there - all good.
Only tip I add some fresh crushed ginger to the 'wet marinade' (overnight); only 1tsp to 5 lbs; not enough to taste in final product, but improves flavor!

We use a dehydrator and just find a steak marinade that we like.
Slice meat into 1/8"-1/4" stripes, marinade over night, dry the next day.
Last year we used Allegro brand marinade, hickory flavor. This has been my favorite so far.

I have made the old fashioned where you salt the meat really heavy and then smoke and hang to dry, but I prefer the dehydrator method

Edited to add: We did use about 10-12 different ingredients then we discovered that most marinades already had most of the same ingredients that we were using.

bottle of soy sauce, 5 dashes of worchtesire, 2 heaping tablespoons of brown sugar, garlic powder, onion powder, a little cayanne pepper, a little salt, black pepper, slice meat thin , marinade for 2 hrs, place on dehydator sprinkle crushed red pepper on top, and dry.

Like others have said there are many good jerky recipes out there or commercially available. Something that is always around at our house is Fiesta Fajita seasoning. For me, it works & tastes great! Sprinkle on heavily let marinade a while then dry it. I sometimes add some extra course pepper too.

Ended up using this recipe and adding some red pepper flakes. Turned out fantastic!

I soak mine in this overnight. Double it and it's enough marinade to do a whole deer. Put it on paper towels and thoroughly pepper both sides. I've worked up this recipe over the last 30 years and I think I have it perfected. I'll smoke the meat at 175 for 12 hrs. Try it.

I make it with montreal steak seasoning sometimes. Its great.
