Sausage Deer

I was given a piece of sausage that has been processed but I'm a bit confused as to the labeling. It states sausage and when I cut into it, it appears to be like summer sausage but there's a handling label from the processor saying that it needs to be fully cooked before consuming.

Does all processors only put this label on there for legality reasons?

Cook it in marinara and serve it over pasta.

put it on a grill if sausage but not if summer sausage. When it is raw that is considered to be "fresh" by some processors.

Ask the person you got it from what kind of sausage it is.

I gave a buddy some dried sausage a couple years ago, he ate a bit said it was awesome and then asked how we "cooked" it. roflmao

This sounds like fresh sausage and it needs to be cooked to at least 160F. I would not treat the label as a CYA from the processor.

redchevy, did you let them in on it? If so, I hope you shared the curing photos each week of the process banana
