Yes, a lot of people say that you can't fry them - they're too soft. Not true. Frying is my second favorite way to eat them, just cut into nuggets (like you do with big catfish) season/batter/fry till' crisp like any other fish. Try not to make the nuggets too big. If you have slabs with the skin still on, you can grill them. I rub them down with margarine, season with Tony's or Slap Ya Mama's, and place a layer of sliced lemon & onion on top (I do the same with redfish on the half shell). Can use foil on grill or use non-stick spray on grate, grill skin side down. My favorite way to eat them is to cut them into round steaks with the bone in and cold smoke them, but that's kind of a different topic there.
I would grill the ones in Italian dressing and fry the ones in milk.
