Kingfish recipe? - 08/15/15 08:55 PM

Does anyone know a good kingfish recipes? I have probably 2 lbs soaking in italian dressing and another 2 lbs soaking in milk. I need to know what to do with it...

They are not my favorite but they can be deep fried or grilled. They make decent croquets.

Yes, a lot of people say that you can't fry them - they're too soft. Not true. Frying is my second favorite way to eat them, just cut into nuggets (like you do with big catfish) season/batter/fry till' crisp like any other fish. Try not to make the nuggets too big. If you have slabs with the skin still on, you can grill them. I rub them down with margarine, season with Tony's or Slap Ya Mama's, and place a layer of sliced lemon & onion on top (I do the same with redfish on the half shell). Can use foil on grill or use non-stick spray on grate, grill skin side down. My favorite way to eat them is to cut them into round steaks with the bone in and cold smoke them, but that's kind of a different topic there. up

I would grill the ones in Italian dressing and fry the ones in milk.

I made a king fish salad, just like you do tuna...boiled fish then shredded it up. Used eggs, dill pickles, mayo and a little mustard. Turned out pretty good. Didnt get a chance to cook the fish I had soaking in dressing. Had to pack and get ready for week long training in Tyler.

Have grilled it with some butter tony's and lemmon and came out good.

My favorite is to cut it into bite size nuggets and fry.

I like to mix fresh herbs and the quaker instant oatmeal(dry) together and bread them and sear in olive oil then top with a nice lemon butter sauce. Breading comes out super crispy and the fish stays nice and juicy.

I've made that with leftover fish. You can microwave it as well as boil it. I love tuna salad with regular fish, especially when my home grown tomatoes are in.

My favorite way is to grill 'em with onion and bell pepper. Have a meal and then use the left over grilled for salad (like tuna salad). The grilled leftovers give your salad a wonder smoked flavor.

The best way to prepare Kings are to get a cedar plank, get about 4 lemons, salt, pepper and a dash of cayenne pepper, cover the plank and the fish with all ingredients then grill for about 6 minutes on high heat. Once its cooked, toss out the fish and eat the plank. It will taste better than a Kingfish.

Kingfish have the same texture as salmon. I'll eat either, but would never order them at a restaurant or buy them to cook at home.

I agree. I myself am not a fan of salmon. Prefer eating lighter fish like smacks, swordfish,dolphin and snapper, preferably mangrove. food

Kings can get quite a bit larger and have slightly darker and oily meat. At least the ones I have caught.

They are similar, they're cousins. Kingfish get a lot larger than Spanish Mackeral, the meat is more grey compared to the Smacks especially in the males. Spanish Mackerel have more of a sweetness to the meat too, especially fresh. Kingfish are definitely edible especially if done right, but Smacks are better IMO. Fresh blackened Spanish Mackerel is freakin' awesome.

Now I'm hungry food My big brother RIP used to take a whole slab (one side) of a Kingfish, season it and put it on the pit skin side down, then put a layer of sausage links down the middle with holes poked in it, then drizzle BBQ sauce on it when it was about done. I was like wtf at first, but was actually pretty good. Or maybe I was just really hungry I don't remember. grin

Steak the fish. Push the meat out of each quadrant and form a ball. Get some cornmeal, add salt and pepper and deep fry. King Fish balls are excellent. food

Fried it.. Came out Great! Used Fish-Fri brand seasoned batter and fried hot and fast.

Last night my fiance Cooked some up for us. Had about 5 lbs of filet. Seasoned with tony's and black pepper, baked at 375* for 25 min. Came out really good! Had 'redneck salmon salad' for dinner. Might use the rest to make kingfish salad (like tuna salad).

cast iron skillet, butter , medium low heat til brown/crusty

salt and pepper or any toppings / dippings
