Well, we are on the road, but heading for AZ instead of TX. I feel like the Beverly Hillbillies, with so much stuff strapped on the RV.

Stopped for the night at our favorite KOA in Fillmore Utah. There is a Costa Vida here close, and I hadn’t been to one in years. Turned out pretty good!!

Tortilla, Spanish rice, retried beans, topped with tender carne asada steak. Lots of salad, guacamole, sour cream, pico, and queso. Muy bueno.

Queso on a salad? Never heard of costa vida before. Your RV isn’t quite Sanford and sons yet!

They have some of the best queso! We go all the time for chips and queso
