Where's the beef

I found out this morning. I ran out of home grown tomatoes last week so no more BLT sandwiches. I was at the new HEB pushing my cart past the deli, when bam. I was staring at a top round roasted to medium rare. Bought home a half pound thin sliced roast beef. Needed nothing more than a little horseradish. Can't wait until lunch tomorrow. Thoughts?

Thoughts = sounds like a solid plan but

Its difficult to cook prime for just rib for just one. Considering getting a thick cut and having it for dinner next week.
