I am doing a rack of pork (which I learned that cut is only available at Christmas and Easter), so I had to put in an order at HEB for it, then I am gonna bbq 2 chickens.
Mine is gone (R.I.P.) but we have invited my wifes dad to come to the lake and we'll take him on the pontoon over to the Tiki Hut (on water restaurant) to have some good ol catfish and maybe a drink or two. He is all excited about it. My kids are 4 legged so I don't get chit.

Did not want to fire up the stick burner for one rack of ribs and glad I did not it would have been a battle with the rain, so I am trying this method I saw on here adding Mesquite chips for smoke, wish I would have had some lump charcoal
