I apologize in advance for posting about a place that is not in Texas but it is too good not to.
On the banks of the Tennessee River in southern Tennessee they've been doing it right for decades.
Hagy's Catfish Hotel. This is the way fiddler catfish should be prepared and eaten.
If it looks light on the cole slaw and hushpuppies, let's just say taking a pic is not always
my 1st reaction when a plate like this hits the table.

My Uncle use to take us there when I was a kid. (did it use to be on Black Cypress Bayou)?

that's about the only way we ever had catfish (home or restaurant) when I was growing up. There was a fish camp/lodge on Lake Buchanan that had a floating dock that we used to fish from, catch, clean and then take into the little restaurant next door and they would cook what we caught. My dad always told the cook to make his extra crispy as he like eating the fins like potato chips. Silver Creek Lodge. Later my dad and few of his buddies started running more trot lines, catching bigger catfish that we would skin & fillet, and do catering for larger crowds but only offered catfish fillets, french fries and hush puppies.

That's the way we ate them as well as crappie when I was growing up before we learned to fillet them. I prefer fillets.

Uh no, don't try to eat the bones. The meat comes right off.

They also have filets from much larger fish. Also delicious.

Thanks for the reminder I’ve got about 10 of those in the freezer I need to fry up. The tail and fins is the best part.
