Under cooked on a hot grill. Swab it with olive oil and whatever seasoning floats your boat.

If you ever want to give it away, then I'm your man!!!!! Some stereotypes are true. The fat Korean boy in me will eat just about anything. hahaha wink

I make a dish called deer and onions that my family, including my 2 young daughters, absolutely love. Probably about 1.5 onions per lb of meat. It's basically stir fried deer with onions and finished with a little butter. Even made a + mushroom version recently.

We ground some with 15% beef fat. They rest was tenderized cutlets. Amazing chicken fried, burgers, sauces. I just used it as a beef substitute.

Get your grinder out and make up some ground, makes great meatloaf!
Mix little beef fat or ruff cut bacon bits for flavor. It's dry similar to venison.

Great eats for the year, also keeps longer if you have a vacuum sealer.

let me know if you want the basic recipe. I fancy myself a real cook so I do NOT have any recipes, just tips and techniques. The slicing of meat is probably one of the most critical tricks. But aside from that it's easy and tastes great. In lieu of venison/other game meat, I have used just plain chuck.
