Seasoned and dry aged in the fridge for last two days. Staring it's 500 degree crust, until a 4 hour nap on the grill at 225 degrees!!

Good looking dinner table tonight. Four hours and twenty minutes; pulled at 128 degrees and rested 15 minutes. Rare cowboy cut for me, and medium rare end piece for Sweet Tooth. Melt in your mouth tender, and will provide lots of leftovers for this weeks camping trip to the lake for anniversary.
