Grew up eating in taco houses around San Antonio my whole life. Never heard of a birria taco till a few years ago and then seemed like they popped up everywhere. Had been meaning to make some and put it off. Saw a seasoning packet for it in HEB and decided to give it a go. Pretty easy, put a hunk of hind quarter in a crock pot with seasoning packet a little salt a can of diced tomatoes and green chilis and a half cup of water and let run on low for 12 hours. Dipped corn tortillas in sauce then filled with shredded meat and cheese and pan fry till crisp. They were good but got a hint of a flavor I didn’t like in it every once in a while. Started looking for recipes from scratch and most of them have cinnamon. After reading that I knew exactly what that flavor was that didn’t belong according to my taste. I’ll make from scratch again sans cinnamon and see how it goes.
